Place on a large (no smaller than 11x17x2") cookie sheet.Preheat oven to 300 degrees.Combine in heavy saucepan, sugars, butter, and syrup. Cook, stirring constantly, for about 8 minutes to 245-250 degrees. Remove from heat, add soda and vanilla. Stir well, until creamy. Pour over popped corn and stir to coat. Stick graham cracker pieces and remaining marshmallows into fudge. Refrigerate 3 hours or until firm. Line with waxed paper, then lightly grease paper.Beat sugar and cream cheese in a medium-size bowl with electric mixer until well blended. Beat in chocolate, milk and vanilla until well blended, smooth and creamy. Stir in any optional ingredient. Spread evenly in prepared pan. Chill about 8 hours or until firm enough to cut. Finish cooking until eggs are all cooked add as much cheese as you like.&lt;br /&gt;warm tortillas add egg mixture to tortillas sprinkle with little cheese. If you need to use white sugar it will taste almost the same; white sugar has no real flavor, just sweetness; but it will have a slightly different texture. Brown sugar is now days a blend of white sugar and molasses. It at one time was an unrefined form of whit sugar. Just make sure it gets dissolved and mixed in well to not taste gritty.&lt;br /&gt;&lt;br /&gt;Butter (salted): need one cup. use 1 cup margarine or 1 cup shortening plus 1/2 teaspoon salt or 7/8 cup vegetable oil plus 1/2 teaspoon salt or 7/8 cup lard plus 1/2 teaspoon salt&lt;br /&gt;&lt;br /&gt;Butter (unsalted): need 1 cup, use 1 cup &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;shortening&lt;/span&gt; or 7/8 cup vegetable oil or 7/8 cups lard&lt;br /&gt;&lt;br /&gt;Buttermilk: need 1 cup, use 1 cup yogurt (unflavored) or 1 tablespoon lemon juice or vinegar plus enough milk to make 1 cup.&lt;br /&gt;&lt;br /&gt;Fats for baking: need 1 cup, use 1 cup &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;applesauce&lt;/span&gt; or 1 cup fruit puree&lt;br /&gt;&lt;br /&gt;Cream (heavy): need 1 cup, use 1 cup evaporated milk or 3/4 cup milk plus 1/3 cup butter.&lt;br /&gt;&lt;br /&gt;Cream of tartar: need 1 teaspoon use 2 teaspoons lemon juice or vinegar.&lt;br /&gt;&lt;br /&gt;I hope some of these help some one out. (For those that do not know what Carnitas is, it is pork, it is pre cooked and you just need to follow instructions to fix).&lt;br /&gt;Take flour tortillas, Line tortillas with cheese, put potatoes on, add carnitas top with salsa, ranch, taco sauce or any other toppings you like. Cream together sugar and shortning until smooth.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Times New Roman;font-size:100%;"&gt;Add salt, eggs, and bananas. Alternate the flour and milk mixture; beat well. Add the nuts.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Times New Roman;font-size:100%;"&gt;Bake 50-60 minutes at 375. Makes 3 loaves&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Times New Roman;font-size:100%;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Times New Roman;font-size:100%;"&gt;To get sour milk add about 1 1/2 teaspoon of vinegar and enough milk to make the 6 Tablespoons needed. Let stand 3 or 4 minutes to thiken. Red bell pepper, diced&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;1 carrot, diced and peeled&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;1 onion, diced&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;2 cloves of garlic, minced&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;2 T. olive oil&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;1 t. pepper&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;1 t. salt&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;1 t. thyme&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;1 lb. Pepperjack cheese (or 1/2 cheddar, 1/2 pepperjack)&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;3 c. chicken broth&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;1 qt. Heavy cream&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;½ c. flour&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;½ c. butter&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;Combine in medium sauce pan: olive oil, peppers, onion, garlic, and carrot. &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;Saute on medium heat until vegetables are soft.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;Add chicken broth and simmer.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;In separate pan, boil potatoes in water until tender (about 15 min.)&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;Drain and add to soup. Add cream, cheese, salt, pepper and thyme. Bring to a boil. &lt;/span&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:times new roman;font-size:85%;"&gt;Prepare roux by melting butter and stirring in flour to make a paste. Add water Little at a time. Use what water you feel you need.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:georgia;font-size:100%;"&gt;slice the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_4"&gt;habenaro&lt;/span&gt; pepper in half, and &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_5"&gt;de&lt;/span&gt; seed it. (you might want to wear plastic gloves when you handle these peppers.)put in pot.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:georgia;font-size:100%;"&gt;Let it simmer, for about 20 minutes, for potatoes to get soft. They ask for them all the time.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Courier New;font-size:85%;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Courier New;font-size:85%;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:courier new;font-size:85%;"&gt;Preheat oven to 400&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Courier New;font-size:85%;"&gt;spray 2 9"x13" pans. &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:courier new;font-size:85%;"&gt;4lbs Hamburger &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Courier New;font-size:85%;"&gt;3 cans refried beans&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Courier New;font-size:85%;"&gt;3 cans olives&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Courier New;font-size:85%;"&gt;14 to 16 tortilla shells&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Courier New;font-size:85%;"&gt;2 large cans enchilada sauce&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:Courier New;font-size:85%;"&gt;1 lbs grated cheese&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Courier New;font-size:85%;"&gt;Brown the hamburger. Add the beans to browned hamburger warm up. Slice up or crumble up olives into the hamburger mix. Pour some of the sauce in a shallow bowl. dip shells in the sauce, coat both sides of shell&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Courier New;font-size:85%;"&gt;Fill the shells with about 1/2 cup mix and a handful of cheese roll up and put in pan I put about 7 in a pan that is what the need is for 2 pans. once pan is full, pour sauce over enchiladas in pan to cover lightly. &lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-family:Courier New;font-size:85%;"&gt;Cover with foil. cook for 45 minutes or until heated all the way through. Remove foil cover with cheese as much or as little as you like. She has been gone for close to 30 years but I can still remember her wonderful cooking. These cookies are one of the things I remember the most growing up. I will more than likely be adding a lot more of her recipes.&lt;br /&gt;2 cups sugar&lt;br /&gt;1 teaspoon salt&lt;br /&gt;2 cups shortening&lt;br /&gt; 1 or 2 teaspoon cinnamon&lt;br /&gt;4 cups flour&lt;br /&gt; 2 teaspoons baking powder&lt;br /&gt;1 cup milk&lt;br /&gt;1 1/2 teaspoon baking soda&lt;br /&gt;4 eggs&lt;br /&gt;3 teaspoon vanilla&lt;br /&gt;4 cups old fashioned oatmeal&lt;br /&gt;nuts &amp;amp; chocolate chips as desired.&lt;br /&gt;&lt;br /&gt;Combine sugar &amp;amp; shortening. Add salt, vanilla, cinnamon and milk mix.&lt;br /&gt;Add flour, baking powder and baking soda. mix well. Add oatmeal nuts and chips.&lt;br /&gt;Bake at 400 degrees for 12 to 14 minutes. ovens may very.&lt;br /&gt;Eat warm with a glass of milk.&lt;br /&gt;you can cut the oats down to about 31/2 cups. Some family members think that the 4 cups make them to dry. Just a personal preference.&lt;br /&gt;I hope you try them and like them. Please if you do try them let me know your comments on them.
