This does make a big pot.
I am usally not a big fan of spicy food but i do like this recipe we came up with.
2 lbs Italian sausage (medium or hot your personal taste)
2 cans kidney beans, drain
2 cans black beans, drain
2 cans pinto beans, drain
2 medium potatoes chopped in to small pieces
2 sticks of celery chopped in to small pieces
1 or 2 habenero pepper(s)
1/2 onion chopped fine and small
4 cans of diced tomatoes with chipoltie peppers
1/4 teaspoon Season all salt
1 clove garlic minced
1/4 to 1/2 cup brown sugar
4 - 6 cups water
Brown sausage, add to big pot, add beans, tomatoes, potatoes, celery,onion season salt and garlic. Add water Little at a time. Use what water you feel you need.
slice the habenaro pepper in half, and de seed it. (you might want to wear plastic gloves when you handle these peppers.)put in pot.
Let it simmer, for about 20 minutes, for potatoes to get soft. Add brown sugar to taste
Let simmer until desired thickness
Take peppers out before serving.
